So I just got an used Flying V, but instead of the 500t pickup on the bridge position it's got a Seymour Duncan 59...
And I was thinking about putting a Dirty Fingers there
Would that be a good choice?

The only person that can answer that question properly is you. What sounds good to you is the most important factor.
Have cut back on my equipment do to circumstance. Just my #1 Gibson Les Paul Standard just now. No amps, no pedals.

Yes, good choice......

good choice ! the dirty fingers pickup is good for both bridge and neck position.
