I asked clarification from Gibson about the pickup height. Here is there response.

Thanks for the reply. The pickup height is measured from the bottom of the string to the highest point of the pickup. The pole pieces are typically set flat from the factory. Thanks.

Here is the original email from Gibson about there factory setup. Here is what they said.

Hi,

Thanks for the email. Here are some factory setup specs that may help:

Action:

12th fret treble=3/64”

12th fret bass=5/64”

1st fret treble= 1/64”

1st fret bass= 2/64”

Pickup height: (measured by pressing down last fret)

Rhythm=3/32”

Bridge= 1/16”

Tailpiece Height:

3 threads on bass side

1 thread on treble

There is not a set measurement on neck relief, but most players prefer a little “relief” in the neck for playability. Thanks.

I have the folowing information from Gibson.

Pickup height: (measured by pressing down last fret) Rhythm=3/32” Bridge= 1/16”

My question is do you measure from the pole pieces on both pickups? Or the plate

If you have the polepieces adjusted relatively flat w/re to the surface of the cover, measure from the middle of the cover to the bottom of the strings. If you have the polepieces adjusted higher, measure from the polepieces to the bottom of the string.
