Judging by some quick research, it appears I have a Fishman Sonicore pickup in the sound hole of my Hummingbird.

Theres two dials on it. 

I was messing with them but cant really tell what they're for?

One is probably tone and the other is volume I would think. If you adjust them and then do nothing, why are they there.

Well yeah one is volume.  Not sure what the other is

 

First off I figured it was tone and volume like a normal electric...not telling much from the "tone" one

Is that a Gibson or an Epiphone?

Some Epi's have 2 jacks and 2 pickups and you can blend them, in which case they are both volume.

yes. I'd say treb roll off. Keep the vol knob at least -> 80%,  and dial it back at the amp.
