Actually a very good question. According to an early Gibson instruction book; "...approximately 1/16th of an inch (1.5mm) from the underside of the string to the top of the pickup when the string is depressed at the last fret of the fingerboard".

I know I, along with many others on this forum, drop our pickups pretty far down into the ring. gives you a softer, warmer tone. Check out what RichCI said in other threads for more information.
