Cabinet makers use them for profiling cabinet doors with raised center panels. It would have to have a large bearing to ride against the edge, and be used in a router table. You would not be able to control such a large bit with a hand held router. You would have to make multiple passes, taking only a bit at a time until you get near the profile you want. Need the whole machine, and it won't be easy by hand as you said. Using a hand plane, you would be able to get it done well, just by planing off some at a time. Whatever method, pics will be a must - showing each step! If could be a fun project, just don't practice on an expensive guitar. Best to find a trashed one for super cheap money and try it out.
