It's simply a code for the amount of figure or 'flame' found in the slab of maple used as the 'cap' on any particular Les Paul.


No-figure tops are know as 'plain-top' instruments. A fairly pronounced amount of flame, known as a 'Plus' top, is designated 'AA'. A 'Premium-Plus' grade top, which has more pronounced figure, is graded 'AAA' and so on.


Some tops have even more pronounced figure. 'AAAAA' is, currently, the grade denoting those tops with the highest level of figure.
