Hey there

 

I have an epiphone special model

 

and I notice that my pickups are too close to the strings

 

and I adjusted it

 

is there any difference in the sound or anything if the pickup is closer to the string

Start by defining "too close". Distance to the strings does affect the sound that your pickups put out. Too far away and they sound weak. Too close and the magnets pull on the strings, eliminating sustain and pulling them out of tune or creating a warbling effect.
