How do you make a good hamburger ?

Hatch chiles are wonderful on a hamburger. For me, I use the fattiest grind available. Max out the grill to retarded temps so I get a good crust on the patty. I make a ton of garlic aioli ahead of time and schmear the buns with butter before toasting (very crispy bun is a must). I like arugula and a fried egg on mine. And a goopy mess of aioli or mayo.

 

No fries or potato salad, I'll have a second burger thank you!

I totally agree with the fresh ground with a higher fat content. Thats where the flavour is.

No one has mentioned the preparation of the patty. NEVER over handle the meat when forming the patty. Squishing it into shape will make for a tougher burg.

Another point when grilling is to throw it on the grill and leave the darn thing alone until it has a good sear before flipping it and as mentioned earlier, when the cooking is finished, let the burgers rest for a few minutes to let the juices redistribute throughout the meat. Same goes for just about any meat.
