that's close to my recipe, with a few substitutions....

instead of beef i'd use 1 lb. of diced venison, and 1 lb. of deer sausage (made here @ home with fresh sage, rosemary, basil, and chili peppers).

substitute 2 small cans Rotel HOT for habanero sauce, substitute red onion for Vidalia, and add 1 can of corn.

brown/ saute' the meats and spices, drain thoroughly, add everything else, boil 10 minutes, then simmer til' done.

Sounds great Bender.

I probably should have mentioned that all the meat and onions are browned first and grease is drained off before putting in the crock pot.

Grease is flavor. Skim the scum last. I'd use 2 onions, Ro*Tel tomatoes (look em up if y'all don't know), and a whole bulb of crushed garlic, me. Cinnamon stick sounds interesting but not for me.

When you say 1 lb of canned tomato sauce, do you mean 16 oz.? As in 1 pint?
