So far I'm aiming at replacing the pickups with a 57 classic and classic plus

Be careful not to lower them too much, they might fall into the cavities and you would have to take out the strings and pickup rings. Most of the time pickups are too hot you can just lower them or lower the volume. (one of my "students" plays with all his guitars (lucky kid) volume at 7. Never higher.)
