Steven Tari Posted April 26, 2009 Share Posted April 26, 2009 1 Cup sifted all-purpose flour;/ 1/4 Cup sugar;/ 1/2 Teaspoon ground cinnamon;/ 1/3 Cup milk;/ 1/2 cup dry white wine;/ 3 eggs, lightly beaten;/ 1 Pound ripe firm sweet cherries, With Stems;/ Shortening for deep frying;/ Confectioners' sugar;////// 1~ Combine flour, sugar, and cinnamon. Stir in milk and wine to make a smooth paste. 2~ Beat in eggs. Let batter rest for 30 minutes. 3~ Tie 4 to 5 cherries into clusters with white or colorless thread. 4~ Dip each cluster into batter, making sure cherries are well coated. Carefully lower clusters into deep fat (370 Deg F. on frying thermometer). 5~ When browened, remove with slotted spoon. Cook only a few clusters at a time. 6~ Drain on absorbent paper and sprinkle with confectioners' sugar. Serve immediately. Serve 1 to 2 clusters for each individual helping.
