If ya cut the meat into fingers, I'm talkin' "Steve Cropper" fingers, and put it in a large zip lock baggie with mustard and local honey, and some lemon pepper, and let it soak, overnight, and then....... Add a touch of red pepper before putting it on a charcoal grill, for just a few minutes....... Each side...... Get outa here........ Burp...... Murph.
