Don't know if you saw my thread about some cabs for a Dr. Z head, as both cabs had different speakers and design we tried both of them separatedly and the head+1x12 cab config was amazing with both (one was a celestion vintage 30 and the other a G12). I do know that some folks love the 2X10 combo and I thought I'd throw this up there to see what people say. I know I'll get more bottom end with the 12" speaker.
