Laney1566
I have always changed 1 string at a time because I was told that you NEED to keep tension on the neck at all times. Otherwise the neck will take a while to readjust to the tension and you will have tuning problems during that time. I have always believed this because it seems logical. After watching pros change out strings though, it seems they take all strings off. It would be an advantage when cleaning the guitar for sure. Can anyone tell me why it is OK to take off all strings? L5Larry
Under "general" maintenance the ONLY time you should remove all the strings at once is if you need fret polishing/dressing, or fingerboard conditioning. PERIOD.
flyingarmadillo
The 6 strings all at once, the 12 strings come off in pairs.
deepblue
All at once. That way I can give the fretboard a good cleaning.
ocdman
I take them off 1 at a time unless I am cleaning the fretboard then I take them all off.

daveinspain
I change the strings one at a time... Seems easier I don't know if one way is better than the other. When you take all of them off you have to worry about the bridge wheels turning and changing the bridge height and the stop bar falling off.... charlie brown
Mostly, 1 at a time. The only time I remove all, is if I need to clean and lemon oil, the fingerboard (once or twice a year). CB

Laney1566
I still haven't found a reason to change all at once. For those of you who do.....do you notice a period of adjustment? Even for Spring cleaning. I change 1 at a time. Makes it very hard.

FirstMeasure
All string come off every time I change 'em. Clean the fret board between every string change with a dry Micro Fiber cloth, and use some kind of Oil if the Fret Board looks too dry (used to be just Lemon Oil, but I've started using Valve Oil lately). There you have it.
